Cantaloupe Salsa
Don't have cilantro? Leave it out.
Prep Tip: Chopping melon can be messy. For easy clean up, place a cutting board inside a cookie sheet that has a side. Empty the juice that collects into the sink or pour into a glass and drink it.

Ingredients
- cantaloupe - 2 cups, chopped
- red bell pepper - 1 cup, chopped
- green onion - 2/3 cup, finely chopped
- cilantro - 1/4 cup, fresh
- lime juice - 1 tablespoon
- olive oil - 3 teaspoons, or you can use canola oil instead
- salt
- pepper
Instructions
- Mix all ingredients in a medium bowl. Season with salt and pepper. Cover and chill. Serve over cooked chicken or fish.
