Crunchy Apple Salad
Prep Tip: Out of cinnamon? Add pumpkin or apple pie spice mix instead, or leave the spices out.
Change it Up: Use any other dried fruit you may have such as cranberries, blueberries, diced apricots, diced dried pineapple, dates, or cherries.
Ingredients
- apples - 2 medium
- raisins - 2 tablespoons
- non-fat vanilla yogurt - 1/4 cup
- celery - 1/2 cup (optional)
- cinnamon - 3/4 teaspoon
- nuts - 1 tablespoon, chopped, any kind, optional
Instructions
1. Rinse and remove cores from apples. Do not peel. Cut into 1-inch pieces. Place in medium bowl.
2. Rinse celery and chop.
3. Add raisins, cinnamon and yogurt to apples. Mix well.
4. Add chopped nuts just before serving. Mix and serve or chill before serving.
Wow! 3/4 tablespoons is a lot of cinnamon. Did you mean 3/4 teaspoons? I used 1 teaspoon & still found it overwhelmed the salad.
