Dirty Rice & Beans

Prep Tip: Usually you drain the beans and tomatoes, but not in this recipe. They provide liquid for the rice to cook.
Change it Up: Use any kind of canned bean you like in this recipe. Change up the flavor by adding different spices such as cumin or chili powder.
Ingredients
- vegetable oil - 1 tablespoon
- onion - 1, chopped
- black beans - 1 15 oz can, or 2 cups cooked -- undrained
- stewed tomatoes - 1 14.5 oz can, undrained
- oregano - 1 teaspoon of dried oregano
- garlic powder - 1/2 teaspoon
- brown rice - 1.5 cups, uncooked instant brown rice
Instructions
1. In a large pan, heat oil over medium heat.
2. Add onion to pan and cook until tender.
3. Add beans, tomatoes, oregano and garlic powder.
4. Bring to a boil, stir in rice.
5. Cover, reduce heat and simmer 10-15 minutes.
6. Remove from heat and let stand 5 minutes before serving.
