Garlicky Green Beans
Make it Faster: Use jarred garlic and frozen, thawed green beans.
Prep Tip: You can also microwave green beans. Trim first, and then place in a microwave safe bowl with 2 tablespoons water. Cover and cook on high until tender, about 3-6 minutes. Drain.
Change it Up: Make this recipe using fresh asparagus in place of the beans.
Nutrition Tip: Buy low-sodium soy sauce when available.
Ingredients
- green beans - 4 cups, about four large handfuls, fresh, washed, and trimmed
- olive oil - 1 tablespoon, or you can use vegetable oil
- low-sodium soy sauce - 2 tablespoons
- garlic - 2 fresh cloves, crushed or 1/2 teaspoon garlic powder
- black pepper - 1/2 teaspoon
- sesame oil - 1 teaspoon (optional)
- toasted sesame seeds - 1 tablespoon (optional)
Instructions
- Fill a large pot half full with water. Place green beans in the pot. Bring the pot to a boil and cook green beans until just tender (about 8-10 minutes)
- Remove beans from the pot and drain.
- In a large bowl, mix together olive or vegetable oil, sesame oil (if using), garlic, soy sauce and black pepper. Add beans to the bowl and toss until well-combined.
- Marinate beans in soy/oil dressing for at least 30 minutes, tossing every 10 minutes.
- Sprinkle with toasted sesame seeds if desired.
- Serve at room temperature or refrigerate and serve as a cold side dish or salad.
